TÓM TẮT
Studies on the hazardous chemical contaminants in food aim to ensure the safety of the food supply and minimizing human exposure to toxic agents. In this study, a proposed analytical procedure is described for determining concentration of cadmium and lead in fish using inductively coupled plasma-mass spectrometry (ICP-MS). The proposed analytical method is the most suitable methodology to control the safety of fish and its products in Viet Nam because of its rapidity, limit of detection and isotopic capabilities. The results show that the limit of detection in this proposed procedure for cadmium and lead are around 0.1mg/kg (0.1ppb) and 0.4 mg/kg (0.4ppb), respectively. This procedure is able to apply accurately and easily for controlling the trace of Pb and Cd in white shrimp for the export purpose. Keywords: ICP-MS; Limit of detection (LoD); Limit of quantification (LoQ); Recoveries; Trace element; Calibration parameters.
