ABSTRACT
The objective of this study is to investigate the conditions for saponin extraction, determine the extraction efficiency and evaluate the antioxidant activity of the saponin-rich liquid extract obtained from Ngoc Linh ginseng leaf stems to facilitate their utilization in the food industry. The study showed that the suitable conditions for saponin extraction from Ngoc Linh ginseng leaf stems included using a 75% ethanol solvent at a temperature of 75°C for 60 minutes, with a material/solvent ratio = 1/35 (g/mL). Under these extraction conditions, the total saponin content was 10,3% (dry matter) and the extraction efficiency was 35.76% (dry matter). The liquid extract from Ngoc Linh ginseng leaf stems had a total saponin content of 26.33% (mass) and antioxidant activity measured by the DPPH radical scavenging method with an IC50 value of 130,196 µg/mL, representing 41,37% compared to the positive control, vitamin C.
