TÓM TẮT
Milk proteins are divided into two main groups: the caseins and the whey proteins. They were considered as GRAS and have a high nutritional value. Both milk proteins were used for the encapsulation, protection and transport of bioactive compounds [1, 2]. Furthemore, different polysaccharides, such as pectin, develop complexation by their electrostatic interactions with proteins. The combination between milk protein and pectin will form an insoluble hydrophilic matrix for sustained-release delivery for pharmaceutical or food applications.Curcumin is a polyphenol extracted from the rhizomes of the plant family Curcuma longa. Curcumin is known to be a health benefic product but it is also a fragile active compound because of its sensitivity to environmental conditions (light, heat, UV…) [3].In this study, curcumin was encapsulated in milk protein-pectin beads by the ionotropic gelation method. These curcumin beads were characterized for their physico-chemical properties (solubility, encapsulation efficiency, tautomeric form) to investigate their influence upon the curcumin release
in vitro
.
