Surimi is a form of protein product that is made from fresh fish by removing head, intestine, washing and separating mechanically eatable pulp parts out of the skin and bones. After the pulp is ground, it is washed, purified, separated water and lipid, mixed with other food ingredients and processed into simulation products [1]. Currently, Danang (Vietnam) has many plants that process surimi products to meet domestic and export demand. In the manufacturing process, lipid must be completely separated from surimi because technically requirement. The lipid that is discarded will go into the wastewater treatment system of the plant and is quickly hydrolyzed and is rancid; as a result, it is unable to be used as food for human or feed for animal.
