The purpose of this study was to optimize the extraction process of macadamia oil by enzyme hydrolysis in order to select the appropriate extraction conditions to serve as basis for the production of macadamia oil production process. The results show that the factors that affect the extraction of macadamia oil are: 1.0% Viscozyme enzyme concentration, temperature 40oC and 5 hours extraction time. The regression equation is: Y = 90.13 + 0.99X2 + 2.52X3 + 1.81X2X3 – 2.44X12 – 1.51X22 – 3.28X32. The results show that there is a high level of compatibility between experiments and regression equations. Using the Viscozyme enzyme to extract macadamia oil, the optimum technology parameters are: 1.12% Viscozyme enzyme concentration, temperature 40oC and 5 hours 20 minutes extraction time, at the time the performance of macadamia oil extraction was about is 90.81%.
