The article presents development of technological regimes of the process of swelling of predried and crushed secondary products of processing mango fruits and bananas of Vietnam upon receipt of dietary fiber. The rational parameters of the swelling process, regardless of their species, are the hydromodule 1:10, the temperature is 20 ± 2 ° C and the duration is 2.8 ± 0.2 h, in the anolyte of the ECA solution pH 5.75 ± 0.25
