 Optimizing working conditions of air blast freezer in seafood processing factories (Scopus)

At present, there are more than 633 seafood processing companies in Viet Nam that take up 19.2% total energy consumption used in industry. In these factories, the most popular freezers are air blast ones. They are the highest energy-consuming equipment, accounting for more than 50% of total energy. Two variables affecting the energy consumption of the freezers are freezing time and freezing temperature. In this study, a model was represented to determine the freezing time of food products and refrigeration load of air blast freezers. It was the theoretical basis for building an objective function of total energy consumption for the air blast freezers in a given processing time. On the other hand, freezing temperature, air velocity and freezer efficiency were also figured out. These calculations can indicate the optimal working point of the air blast freezers during the freezing process.
ABSTRACT
